One of the best creations of recent years has come in the Reuben casserole. This delicious meal uses leftover corned beef, cabbage, the same dressing, and usually a noodle or potato addition. To create a keto-friendly version, I use cauliflower for a creamy and perfect compliment to the saltiness of the corned beef. There's much to love about this dish, and it will surely satisfy your Reuben cravings with none of the worrisome carbs.
Is Sauerkraut a Low Carb Food?

How do I Make Keto Thousand Island?
For my homemade dressing to go in your corned beef casserole, you will simply mix the ingredients together in a mason jar and shake well until fully blended.
Ingredients for Thousand Island include mayonnaise, sugar-free ketchup, dill pickle relish, salt, vinegar, and sugar substitute. For full measurements, see the printable recipe below.
How to Make a Keto Reuben Casserole
Start by preparing your baking dish and preheating the oven.
If you do not have a keto-friendly dressing on hand, follow the recipe for making a homemade Thousand Island and set it aside.
Now, you will bring water to a boil, add in salt and your cauliflower and cook for 10 minutes or until tender. You can also use an already riced or cooked cauliflower if preferred.
Drain the cauliflower, then add in butter, sour cream, and blend as you would mash potatoes and add in cheese. This mixture may be lumpy, but that is okay.
Now, mix together your chopped cabbage, corned beef, and the dressing together, and pour it into the prepared baking dish.
Spread the mashed cauliflower mixture over the top, and sprinkle the remaining cheese over this mixture.
Bake until heated through and bubbling then serve with sliced green onions.

Ingredients
- 2 cups leftover corned beef, coarsely chopped
- 1 head cauliflower, cut into florets
- 1 teaspoon salt
- 1 tablespoon butter
- ⅓ cup sour cream
- 3 cups leftover cabbage OR 1 small head cabbage (to cook and drain)
- 1 (8 ounce) block swiss cheese, shredded and divided
- ½ cup Thousand Island dressing, low carb or homemade
- Sliced green onion, for garnish
- For Thousand Island dressing:
- 1 cup mayonnaise
- 3 tablespoons no sugar added ketchup
- 3 tablespoons dill pickle relish
- 1 tablespoon white distilled vinegar
- ½ teaspoon salt
- ¼ teaspoon monkfruit sweetener
Instructions
- Preheat oven to 350 degrees. Prepare a 9x13 baking dish with nonstick cooking spray.
- Prepare Thousand Island dressing by placing all ingredients in a mason jar, seal, and shake to combine.
- Bring a stockpot of water to a boil. Add the salt and cauliflower. Cook the cauliflower for about 10 minutes or until tender. Drain well in a colander.
- Return the cauliflower to the stockpot and add the butter and sour cream. Beat using a hand mixer until the mixture combines. It may be lumpy. Stir in one cup of shredded cheese.
- In a large bowl, mix together the cooked cabbage, corned beef, and dressing. Transfer to baking dish.
- Spread mashed cauliflower over corned beef and cabbage layer. Top with remaining cheese.
- Bake for 30 to 45 minutes or until heated through and bubbling.
- Top with sliced green onions and serve.
